I travelled to Canada and Mexico in 2006 and 2007 as an LPR. My passport does not have stamps on it because border patrol officers only looked at my green card. Now to prove the dates I was out of the country, I figure I can show them the exif data on pictures taken on those trips. That would involve bringing my computer. Would they let me bring my laptop in?

You are not even allowed to carry your phone inside the embassy.....

Not allowed, I would guess. I had to return my phone charger to the car: not even that was permitted inside (it was deep down in my purse).

I think they are aware of this... I asked a question on my friends behalf who has been to Canada a couple of times but same story, no stamps. If you disclose this information on the application and if they ask you can mention/remind the IO that you didn't get any border stamps, they will recognize it... I wouldn't worry about it. Now, if your trips were less than 24 hours then you do not need to include them and do not need to mention them.
