I-864/ affidavit of financial support - Just started working

Hi everyone,

I need your help with questions regarding affidavit of financial support-

My husband quit work and went back to school for the past 5 years- during which time he earned 2 MA’s in business. He managed 3 years with his saving and credit card debt, 1 year only with credit card debt, and 1 year with stipend from school (above poverty line, but it's a foreign school so it's not reflected in tax return). Now he’s finished with grad studies and just started working in February 2010. He’s now earning decently high salary, but the problem is that it’s not reflected in any of his past tax returns. Unfortunately, we don’t really have someone who can be a co-sponsor.

How do I paint the picture to the Immigration that his break from work was temporary and planned, he’s a recent grad student, and just started to and will continue to earn good wage? Do I tell them this story in the cover letter? Besides a copy of tax return (which I think is mandatory) and pay stub, what can I include to support this picture? A letter from employer stating that he’ll continue to make that much? A copy of Bank statement from the past a few years (by the French bank)? I do some investment – so a copy of that might help? I appreciate your help!
