Hi there, I would be grateful for any advice from anyone. My partner and I are looking to emigrate to the US from the UK. My employer has an office in the US (whether it be Houston or New York, we haven't decided yet!) and so I would be sponsored by them for a work visa, however, my partner is not in the same situation. His job is not classed as one of the "special categories of jobs" and we are not married. Do you think there's still a chance of him being granted a permanent visa or does it sound completely impossible, given our circumstances? Thanks.

Broadly speaking, visas are issued based on either work or family. If he's not married to you or otherwise related, he isn't family. He'd have to get his own work visa.

Of course, since he's a UK citizen he could come here as a visitor and simply overstay. It wouldn't be legal but it's done all the time.

It's impossible to know for sure how much of a chance he has to get a visa. There are lots of factors. However, if you aren't legally related, then he's on his own. By that I mean that your existence doesn't much affect the case (at least not positively, if you are in the US, you make it difficult for him to prove ties to the UK, if that would be necessary).
