Got email notification of NOA2 a couple of days ago (amazingly speedy - only 62 days after NOA1!)... So I'm expecting news from the London Consulate some time in the next few weeks (I'm the beneficiary).

Now hopefully by the time I get an interview appointment / go to it, I will have full time employment. But I wanted to check here and see if anyone has experienced any issues at interview if they are not employed at the time (in terms of dependency, etc). I don't have savings either, the very opposite in fact, as a recent graduate I have some pretty hefty debts. Fully intend to pay my way, but in the current job climate this is proving much harder than I anticipated.

So should I expect a grilling on this? Is there anything I should prepare in advance to show that I'll be a good immigrant?

You are the beneficiary? If so, your employment status will have no bearing for your interview as you intend to immigrate to the US. The consul will only be looking at the petitioners income. If your fiance is in the same position I would try to find a co-sponsor.

Also, they may or may not request the I-134 form from your fiance, If you ask this question in the UK forum the ppl there will be able to give you more specific info about the embassy you are dealing with.

Good luck!
