How does it work when someone is living in one state and files AOS but during that period we move to another state? Will the AOS transfer to the local office and is there anything else we'll need to do?

As no one has answered I am going to throw my tuppence in and say that as long as you advise USCIS of your new address, wherever the case is transferred to (if indeed it is transferred) it will be seamless to you and the AOS interview will be held at your (new) local Office. I shouldn't worry too much about this, just ensure that you do advise them of your new address as soon as possible.

I personally wouldn't move while I had AOS in the works. USCIS isn't known for being able to efficiently link up address changes, and all correspondence is done by mail.

I wouldn't file till I was planted.

Flower - your husband is arriving on a K3 visa. That means he has TWO YEARS to adjust his status. There is no reason for any sort of rush to get his paperwork moving. He cannot fall out of status until his I94 expires. He can file for an Employment Authorization document without adjusting status, so he can work.
