Im confused with the employment letter. my fiancee was activated this may (because he was a reserve)... so the only letter he have.. is THE EMPLOYMENT LETTER (for his other 3 civilian jobs) from the military that states that he will be activated and will be deployed to afghanistan this august...

is this enough??? or should we still get the employment letter from his civilian jobs?

Emplyment letter(s) is/are optional. Not all companies will even issue one.

Some companies will not issue a letter on letterhead or otherwise, but will furnish a toll free phone number, or in the case of my company; they go through an outfit called The Work Number. They furnish employment verification and employee pay. What makes it difficult is when he was put on active duty. If it were me I would go back to the employer for the information and verification. The more the better.
