Okay so I am making Mike a strawberry shortcake for his birthday. I have never made one before and it calls for heavy whipping cream. I have a question though...if I make the cake now and put it all together later tonight, would the whipped cream be all soggy and melted by tomorrow?

Or is that why it asks for heavy cream? Does that mean the cream will hold better? I am afraid to make this now and have it turn into a soup by tomorrow. I won't have time to make it tomorrow because we're going out for dinner with the out-laws.

hi sprailenes if you whip the cream late today it will be fine overnight to assemble it tomorrow btw it's nice w/ a hint of vanilla extract in the cream. since i answered first do i get a slice? :jest:

Heavy cream when whipped holds its shape better and longer. :)

I found this info for you on a baking website:

"Whipped cream won't stay whipped for long, and it's best to prepare it immediately before using. If you need to work ahead, you can refrigerate it for up to 24 hours.

Just before serving, whisk the cream briefly by hand to thicken it up. It's not as billowy as on the first day, but it is fine to use. For longer storage, whipped cream can be frozen by teaspoonful on a wax paper lined cookie sheet. When frozen, remove to a resealable plastic bag and place back in the freezer."

oh, and for best results, make sure everything is super cold -- the cream, the bowl, the beaters/whisk, even the room you are working in shouldn't be overly warm.

Thanks guys!

Omg I just made this batter according to the recipe and it came out hard as a rock...maybe because I used my mixer to try to and do it? Maybe this recipe doesn't like technology, so now I'm doing it all again with a wooden spoon.

Ohh okay so I whip the cream later and then assemble it tomorrow when i get home? Thats cool I can do that. Thanks again!
