In a FAQ section says...

It is sent to the USCIS (INS) district office closest to where you will reside, which will be the office handling your case once in the USA.

1. If we move before submitting AOS application - Chicago to D.C., will the old office forward documents to the new office?

2. My fiancee hasn't come to US yet. Should she ask POE officer to send documents to the new office?

I want to minimize the chance that our documents being lost during transfer.

Thanks a lot!

Your fiancee/wife's documents will be forwarded to the appropriate location when you all apply for AOS. Just remember that anytime you move, you will need to update USCIS with your wife's new location.
