You have no idea how much I miss all those yummy dishes I ate in Pampanga. I miss and think about them each and everytime I get hungry here in Dallas. Unfortunately its not going to be until 2 more years before we will visit Philippines together with my wife after she travels here. Hope my wife picked up a few recipes from her mother cause she is really a great cook..!

SEAFOOD COMBO:

  1. Simmer to cook: clams, shrimps, oysters (or any seafood combo you want)
  2. Then add: baby corns, broccoli or snap peas and quail eggs (you may add any veggies you like)
  3. Then add oyster sauce -> simmer until done
VOLCANO CHICKEN:

> all you need to do is bake chicken submerged in Thai Chili Sauce (this is for those who like hot and spicy foods)

KALDERETA:

1 k beef (chunks)

1 big can (350 gms) liver spread/ground liver

5 onions (minced)

5 cloves garlic (minced)

6 tomatoes (sliced)

1 cup tomato sauce

3 green capsicum/bell pepper (diced)

3 red capsicum/bell pepper (diced)

4 pieces hot chili peppers (minced)

3/4 cup grated cheese

2 cups beef stock or water

1/4 cup cooking or olive oil

  1. Saute: garlic, onions then add the tomatoes, red and green bell peppers and the chili peppers
  2. Add: beef, tomatoe sauce, liver spread, water or beef stock, and salt to taste. Simmer for 1 hour or until beef is tender
  3. Add cheese and continue to simmer until sauce thickens
  4. Serve with plain rice
For special Kaldereta: instead of water or beef stock, they put 1 kilo of onions per 1 kilo of beef.
