My fiancee paid the MRV fee of $240 on April 1st, 2014. On that day, the fees table on ustraveldocs website showed that $240 is exactly 2496 UAH. Now, today April 8th, 2014, the table shows that $240 is 2640 UAH. The currency exchange rate has changed. So how does this affect us? Should we go back to the bank and pay the left over amount and get a new receipt since now because of the exchange rate, the value in ukrainian grivnas is a bit higher than it was on April 1st?

No, you are fine. As long as she has the receipt to show she paid you are good to go. The fee in UAH changes weekly. The form she submitted to the bank reflects that week's exchange. You should be good. If in doubt, call the embassy in Kiev.
