I just filed my tax return but it is below the minimum requirement....I was unemployed using my savings until I got a new job. My new job is above the minimum easily now..... I have not started the process yet. Can my employer send a letter to prove my income? We will celebrate our 1 year anniversary in July 2017. Colombian wife, American husband.

It doesn't matter at the USCIS stage. You can write that you make 5 billion dollars/year and they will take your word for it. At the consulate, the officer should accept a letter from your employer and pay stubs as proof of sufficient evidence. But my advice is always be prepared with a joint sponsor if your tax return shows income below the poverty line.
