We finally got our NVC case number, not yet sent to the embassy. but am I Ok to start scheduling my medical and completing the DS-160 or do i need to wait on the NVC email? When and how did you schedule you interview?

Yes, since you have the case number now, I honestly would not wait. Go to the UK-based US embassy website and there are specific instructions on there, including how to schedule the interview.
