I had a pretty good experience at the interview. It all went well.
Paperwork: We made sure we follow all the instructions on packet 4. Still, they asked for some additional documents that I was lucky I had with me: Beneficiary's birth certificate and beneficiary's copy of passport. They also needed to have the appointment page confirmation printed.
Process: I arrived at least 1/2 an hour before the interview to go through security. At security, I had to leave pretty much all my personal items including my cell phone. They asked me to open the sealed medical examinations envelope and to leave the medical examinations CD with them (No need to bring it to the interview). There were two stations where they checked my documents and placed them in order. At this point, I noticed other applicants missed having the DS160 confirmation page and the singleness certificate from the Central Registry (CSE located by Funeraria Monte de los Olivos). They were asked to go outside to print the DS160 or to send the certificate by mail later.
Interview: The interview went very smoothly. It took 15-20 minutes. The interviewer was very nice and he showed interest in learning details about the relationship. He was very surprised by our story (meeting online and quick engagement) but he did not seem doubtful, just curious. Questions included but were not limited to: Where and when did you meet? When did he proposes? How many times have you seen each other and for how long? Did he ask your parents before asking you to get married? Other questions were more related to my own travel history, education, occupation, health, etc. He took a look at all the evidence and he mentioned it was good evidence and very organized. As he sorted through the evidence, he asked the question and wrote his notes. At the end of the interview, he said he had the intention to approve the visa unless something came up in the system. We should be hearing back in two weeks. Since, I had a valid tourist visa, they kept my passport because this visa had to be cancelled without prejudice.
Visa: I got an e-mail two days later saying my passport was ready for pick up. I got the visa the next day :D Super fast!
