So my husband and I decided to fly out to Denver for the interview and take our chances with the officer. To recap: we'd filed AOS in Denver but then moved to Florida .. and received the interview date in Denver.

We went armed with all sorts of evidence and paperwork, and were called-in to the interviewer's office exactly at 10:45am. All he asked us was:

1. Why we flew to Denver instead of canceling this interview and having our interview scheduled in Miami?
(I told him that I had sent a notification letter to the Denver office re: our new residence but received no reply from the office about rescheduling our interview in Florida. He checked the system to see if they had received the letter, and lo-and-behold the system said they'd received the notification but no one did anything about it). *whew*

2. Employment letters for both my husband and I

3. He asked me my husband's b'day and him mine.
(I nearly forgot out of nervousness)

4. What date we got married

5. If I remembered my social security number off the top of my head.
(Thank heavens I remembered!)

He didn't bother with any documentation (even though we made hoards of copies for the officer to keep in his records).

He stamped my passport with the Conditional Resident stamp and told us that the actual card would come in the mail (to our new Florida address) in a few months.

The saddest part of it all? I spent over $200 getting my medical certificate done (I-693) and he didn't even bother to take it at the interview! I came home with it intact in the sealed envelope!
