We filed May 25th, NoA1 date is June 1st, and no NoA2 yet..... I think CSC has slowed down since May NoA2s
hopefully things start to speed up, because we've got the dreaded months and months long wait at Montreal!

I think if you sign the G325A on August 25th and your fiance sends it September 1st, or around that time.. it should be fine. I'm sure USCIS realizes you have to mail the forms to your fiance in the US since they have to be originals, not copies that have been faxed or emailed.
I think as long as it's a reasonable time period, it's not a big deal.
I think I signed the forms on May 15th or something, and we sent it May 25th.
Maybe someone will pipe up with a definite answer, but I wouldn't worry too much about the span of a few days!

I love the food network! I also like Everyday Italian, Barefoot Contessa, Next food network Star, Bobby Flay's show (I forget the name... )... and basically most of the shows on there! I don't get the channel in Canada so I only watch it when visiting my fiance
We both love it though and get great ideas for dinner!
I also like Law & Order: SVU, House, Criminal Minds... I don't watch much TV in Canada but when I'm in the US with my fiance, we watch TV sometimes in the evening

Is short, the visa waiver program is a program that allows a person from a country on the WVP list, to visit the US without a visa, for up to 90 days for business or tourism. You can find a ton about it if you search for it online! British citizens of the UK are on the list.
Is it possible for your fiance to travel from the UK to Mexico to attend the wedding, then enter the US from Mexico for you to get married? That may not be compatible with your hopeful wedding timeline; I wasn't quite sure from your post!
Even though the UK is on the visa waiver program, that doesn't mean he is exempt from the AP rule. He still must receive either AP or his greencard before leaving the US and ensuring he will be able to travel back to the US without problems. He will not be allowed to marry you, then travel to Mexico for the wedding, and back to the US without either AP or his green card.
And, I hate to be the bearer of bad news, but there is no real feasible way of "speeding through" the K-1 process (unless you are an active soldier, I believe). It's hellish and slow! haha... I'm going through the Montreal consulate, which is notorious for being slow... I'm not sure about London, but you are looking at a few months at least, most likely. If you look at people's timelines that went through London, you could get a better idea of how long it will take between NoA2 and your interview!

This process is more time consuming and frustrating and overwhelming and heart-ache inducing than any "outsider" could possibly imagine!
I haven't even gotten to NoA2 yet, and feel so much frustration and anxiety over the whole process - and that's just because I'm convinced somehow it won't go smoothly.... I can only imagine your frustration to experience that RFE business!! Especially all because of the fact that someone LOST your Medical!!!

RFE = request for evidence
They will send an RFE if they feel you have insufficient/incorrect info.... I have no idea about AOS on H1-B visa, but I know for K-1 we need the long form.
Maybe someone here who has done AOS from H1-B will pipe up!

You said your coordinator has been changed - what do you mean by that? Were you a nanny and got your visa through an agency or something along those lines? If so, changing coordinators should be no big deal - people change jobs all the time. Your info should be in a general data base for the agency.
My assumption is you used SOME sort of agency/organization because J1 visas are fairly specific; I think - as in, you need a place willing to hire you before you can be issued the visa.
I'm not 100% sure that we NEED the DS2019, but my assumption is that we could be asked for proof of any previous immigrant/non-immigrant visas previously issued for the US. The interviewing officer may or may not ask for it and they may or may not be lenient. I'm not sure.

You can get a long form and short form of a birth certificate in Canada. The "short form" is the wallet sized one, with just your name, place & date of birth. You were probably able to use that for your passport and most things up to this point in life.
The "long form" has all the same info, but also lists your birth parents. From my understanding, this is the form we need for the embassy interview and AOS. But, if you are sending your AOS forms in, you have probably gotten past the point of an interview (assuming you are going either K-1 or CR-1 marriage route), and have not been asked for the "long form", so maybe the short form will be sufficient.
You can order both forms online, at least in Nova Scotia. Try googling "birth certificate nova scotia/ontario/whatever your province is" and it should easily come up with the website for ordering it. The long form costs $35 CAD in NS and takes about 10 business days to arrive in the mail.

I had a similar problem. I was in the US in 2006 on a J-1 visa as a camp counselor, but it's been 4 years and a lot of moves due to University and such, and I lost my paperwork. I'm from Canada & the 2 year clause did not apply to me, but I am still nervous about losing my papers.
So, I contacted the organization that did the work for my visa (BUNAC USA) because they did all the paperwork for the camp to hire me. For $25 USD, they are sending me a copy of my DS2019 from 2006.
Is this an option for you?? Were you a camp counselor or a nanny or doing something that required you to go through an agency? If so, just email/call them and explain the situation and they should almost definitely have record of your DS-2019.

I'm not really aware they want more "proof of engagement" other than your letters of intent, and the fact that you two are legally able/willing to marry within 90 days of your entrance into the US - at this point. That will also include showing proof via divorce decrees from a previous marriage of either the petitioner or beneficiary, it if applies. Some people also include the marriage certificate from their previous marriage, as well.
I've read at the consulate stage, they want more proof of an ongoing relationship - photos, emails, chat logs, phone records, engagement ring receipt (if applicable).
Has anyone sent you a link to the guides? If not, go to: http://www.visajourney.com/content/k1guide .. I found that extremely helpful in knowing what I needed! It's definitely helpful for peace of mind, anyway.. knowing you have the correct documents!
That being said, there is also what people refer to as "front loading", that is, piling high the evidence of your relationship with the initial petition, despite not REALLY being needed (again, you only need your letter of intent stating you are legally able & willing to marry... divorce decrees, if applicable.. as far as "proof" of your relationship goes). My fiance and I were in between keeping it basic and "extreme front loading". We included a few photos of us (labelled on the back, where, who, when), a couple of emails we had sent each other, and a couple months of phone records. Nothing over the top, but enough to show we have a real relationship. It just helped to give us peace of mind.
I hope my answer wasn't too contradictory! I think the bottom line is, as long as you fill the minimum requirements for the petition, as the guides will show, you are fine, and you have done what USCIS needs. Anything other than that is really peace of mind for you and your fiance!

Lucy - I totally understand the love/sad feeling of the visit. My fiance and I have been together over 2 years now, and we have been waiting 88 days now for NoA2. I took a year off between years of uni to spend more time in the US with him, which was amazing, but now I'm back in Canada working my summer job and doing my teaching credentials, so we only get few & far between visits, compared to last year.
He is coming to visit me at uni in September (3 weeks from today!!)... and obviously I'm excited and so happy... but at the same time, I know as soon as he leaves again, I'll be missing him like crazy and feel miserable until I get into my routine again, with day to day stuff, and whatnot.
I have been trying to think about it, but still pray every single day for our NoA2. I also plan things for the wedding, and look at wedding things online and such.
I feel your pain and I'll keep you in my thoughts for NoA2's
