The Petitioner had sent the withdrawal letter to the US Embassy, the US Embassy sent my case to NVC. What is my next step? Do i or petitioner have to send any letters to NVC?

Hello. Not yet. But we are going. 

I want to cancel K1 visa case (the docs are in poland now) and then i want to apply documents for CR-1. I am a beneficiary.Do i have to wait after K1 visa cancellation. Or i can apply CR1 once i cancel K1 case. 

Moreover, my fiance is different for k1 visa and cr-1.

Simple statement that the relationship has ended , there is no future possibility of reconciliation nor marriage. 
Sign it 

email it to the consulate and for good measure send a paper copy of letter to the embassy and one to USCIS ( address on copy of I-129 F )…but it is enough to put consulate on notice via email and letter .

But understand many cancel a K1 petition for various reasons like a  disagreement

members have done this and then asked, "can i reinstate my k1 pettion after cancelling it?"

and NO u can't ,  u would have to start from scratch
