It's ok to have the interview. Unfortunately, as you mentioned, you can't change the DS-160 attached to your Visa application.
I would you fill out a new DS-160 and bring its confirmation page to the interview along with the other one you filed in 2021. I'm not an expert but this is how we do it in my country.
The idea is to let the office know that things have changed since then. They could decide whether to consider the new form to use the old one.
Make sure you bring documentation to support your application.
