Immigrant visas do not require to book an appointment at CAS for pickup, as soon as you get the email just go there with a copy of your Colombian ID, tell them you are there to pickup an immigrant visa and they will let you in.

It depends on your visa type. Family visas are basically current, employment based visas are very slow, currently they are interviewing people DQ in 2020.

Here you can find all steps to be followed:
2 months you mean time for interview? What is your visa type? As far as I am aware they are catching up in Family Based, but 2 months I think it is way too quick as far as I am aware.

It means you take a copy of the original document, take it to a Notaria and ask for an Autenticacion. They will seal it and sign it after you pay the fee that's it. If you are in Bogota already, here is a list of Notarias.
Quick question, when did you get your LOA 2 (USCIS Approval)?

Our primary concern at this moment is does the consulate in Bogota accept cosponsors for the Affidavit of Support? I'm hopeful that we can use my parents as cosponsors as a backup in the event that my affidavit is not accepted because (a little background here):

Can prove assets in lieu of providing tax documents to get approval at this stage of the process, or is this only applicable to when she's state-side and we're applying for permanent residence?

Hi all, based on this embassies are reducing the priority and in some cases stopping it completely for new Tourist Visas to improve the backlog on the immigrant side. We have been DQ since Nov, and still waiting for an interview

Yes, that is exactly what we did :), though ours was not a K1 but still a resident visa. We also received the email to book an appointment.
