I'm in the same boat as you and I'm not filing my 2021 taxes until I get my wife on US soil and get her SSN so I can save on my 2021 tax liability. Form I-864 (Affidavit of Support), Part 6, Item 23.b, allows for the submission of the second and third most recent tax year transcripts so that's what I did. I'm self-employed so I'll probably add my 1099 and P&L for 2021 as further proof. Our case is being reviewed directly by the London Embassy so I'll see what they say.
