ACCEPTED!!
What worked: a plain page of jobs, positions, and dates for each of us. I sent mine with my original signature and I sent a scanned copy of his page with his signature. I also included signed proof of class registration records for the times when I was a full-time student. And, included co-sponsor form for proof of financial support.

As others explained, there's only a difference at the Embassy interview - to get the Green card you'll still need 125%
The spousal visa cost is cheaper and your spouse could work right away - it seems like the savings/extra income would be useful to your household
