I had my interview on Wednesday and submitted the following:

Latest federal and state tax returns
    Latest joint bank account statement
Proof of joint ownership of car
Car insurance with both our names on it
Life insurance showing each other as beneficiary
New copies of letters sent by the utility company to show both of our names on it
Proof of new auto loan application in both our names last year
Latest property tax bill showing both our names

While the officer did not mention why we were called in for interview (I am CR-1 and never been interviewed in the US before), he did say at the end of the interview that when everything is in order, the interview is very short and not what people think would be 7 hours long. He was very nice and even suggested we check out some Greek food in the area, since we drove almost 3 hours to get to the interview. We were asked the following:

Confirmation of biographical details (my name, my date of birth, husband's name, husband's date of birth, our residential address and what type of property it is)
How many times have I been married? (This is my second.)
How did we meet? (This was a very long story and my husband was asked if I had missed out anything, lol)
    Colour of our house?
How many bathrooms are there in the house? (We only have one, so the officer commented 'oh that sucks', lol)
Do we have any kids? (We don't.)
(After seeing our dog-themed mask) I assume you have a dog? What kind of dog?

He took the copies of pictures I had brought at the end and they were mostly road trips with our dog and our dog rescue work and we chatted about that. I got an email update 30 minutes later to show that new card was in production and the latest update is that the card has been mailed.

I really wouldn't overthink it for a legitimate relationship  Hope this helps!

    Update:

I came to the N-400 interview on June 24 without my wife. The IO asked some questions about our history and then moved on to the Civic questions, then the read & write test. I passed them all. Then he moved to the Yes/No question. He asked me to explain a lot of words like : what does “ trurth “ mean? “genocide”, “communist”, “torture”, …. Which was way too much and he didn’t like my answers. Then he said that I pass everything but I failed English test???? and I need to come back one more time. On the paper he gave me, it said I had one more chance to do the English test again which is ridiculous. I was in school here in the US for 8 years and he said that I had problem with understanding English. I was really disappointed and I thought that they just needed more time so they gave some bs reasons to delay it.

In July, I received the schedule for the 2nd interview, which happened yesterday. I came in at 7:00AM. The guy at the counter just asked me to show my ID and my Green Card. I gave him the stamp in the passport. He asked where my wife was. I said she’s at work. He didn’t want to let me in. I told him that we already had interview together with the i-751 and I just come to retake my N-400. That guy just told me that “oh, your’re not going to pass because your wife is not here.” I was sweating and thinking “####### is this”? I came in and was called 30 mins later. The IO was friendly. He asked me what I was there for. I told him that I was there to retake the interview. He asked why I failed last time. I told him that the IO had told me that I failed my English which was weird. He asked how I got there. I told him that I drove there by myself. He asked where my wife was. I told him she was at work. He asked what was her job. I answered and then he asked if we both ever had an i-751 interview. I said yes, 2 times. He asked why 2 times. Then he move to my  thick stack of documents. He pulled out our stack of pictures. He looked at every single one of them carefully.
Then he asked me to stand up, raised my right hand and sworn to the Oath.
Then he found out that I passed all the Civic questions and the read/write test. He then moved to the Yes/No question. He asked about the meaning of “genocide”. Then he moved on with all the questions. Then he asked me to look at the tablet and confirm all my info. Then he asked me to sign the Oath. I was thinking that I passed. He printed out the paper and said that I passed for the day but he need more time to review my case so the decision cannot be made. I was sooooo disappointed with the waiting game.
This morning, when I checked my email, I saw an email from USCIS. I opened it and it says my I751 Status was : Card in production. I logged into my account and the N-400 status is: Oath Ceremony will be scheduled. I was so happy. Finally my journey has come to an end after 6 years. Thank you Visajourney for all the info, and thank you everyone that followed my journey. I wish all the best to you.
