I've got it. I went back into CEAC website and choose IMMIGRATION VISA and it shows:
Status: READY
Case creation date: 01-Sep-2016
Case modified date: 08-Sep-2016
I know for sure the case creation date is the date the NVC assigned my case number (because I called them that day). I guess the case modified date is the date Consulate received my paper.
I don't know why they classify K-1 as immigration instead of non-immigration. Before, I always selected Non-immigration in the CEAC site, that's why I didn't see anything.

I got a quote from an immigration specialist for $1,600 in California and a $3,500 quote from a lawyer from the same area. What are your opinions on which one to use? I feel like I should spend the extra money for a lawyer, but in some ways, an immigration specialist also has tons of experience with clients. My fiancee is in Vietnam.
