You can send a copy of your current passport. No worries. Looks like you have the bigger issue handled. For other readers, it is best to get the passport in the married name, ASAP after the marriage, and avoid the later stress.

Send a photocopy of the one you have with your maiden name. You don't need to get a new one.

To dispatch with the semantics first, joint sponsor is the proper term when referring to an I-864, not co-sponsor.
Personal Assistant is an acceptable job title and this can be supported via a letter from the employer stating his job title and salary or paystubs that show rate of pay.
