The thread you reference is about entering the US with a K-1 visa and not being able to get married because the foreign fiance(e) had something emergent they needed to return to their country for before getting married. In certain instances such as that, a K-1 can be re-issued. Did you read through that entire thread? The consulate would decide if they would allow the re-issue due to you having a good reason to leave the US before fulfilling the intent of the K-1 visa, and then you need to pay the fee and supply the documentation again. A K-1 visa that is re-issued is still only valid for 90 days from your first date of entry with the original K-1 visa.
None of that applies to you wanting to use the K-1 as a tourist visa. The K-1 is a fiance(e) visa. Is it used to bring a foreign fiance(e) to the US in order to marry them and have the foreign spouse then file to become a permanent resident and live in the US. The K-1 is not a 'get to know you' or visitor/tourist visa.
The two of you will need to sign statements stating you have intent to marry within 90 days of entry with the K-1. You do not have intent to marry within 90 days though.
You can most likely get away with using the K-1 in the manner you are suggesting, but you would then need to re-file for another K-1, or get married and file for a spousal visa. Seems like a lot to go through to have a visit first. You would also most likely need to explain to the next CO as to why you did not marry the first time around.
