Going on trips between NVC DQ and Interview

My spouse and I wanted to visit 2-3 foreign countries while we are waiting for her interview, which could be in one year based on current projections.  The trips would be tourist trips and would last no more than 3 weeks.

 

Is there any issue with traveling to "third" countries(not USA) between NVC DQ and the interview , or any documentation to provide at the interview?  

 

I have heard that a police certificate may be required from specific countries?  Any insight?

Thank you.

 And the countries you're planning to visit also matter.  Any visits to countries that are deemed state sponsors of terrorism will land you in AP down the road.
