EB-3 Visa/job question

First post as my family and I start the research.

 

To make a long story short, wife and I are looking to move from Canada to Orlando.  We have family in Orlando and would love to just get a fresh restart there.  I have a great deal of professional experience however only a few college courses (no associates) and I have over 15 years in the financial services/sales industry.  Possessing mortgage, mutual funds and Insurance licencing in the past.  That being said, I have my eyes on the EB-3 skilled visa (If I'm correct in my research).

 

Now, my real question here is, I see so many getting their jobs and Visa's approved via EB-3.  I would like to know is, how are people finding the jobs that are willing to sponsor?  I've seen a few but a lot mention they will not.  Please share any feedback on how you can jobs where a company may be willing to sponsor on EB-3 skilled.
