I am a retired US naturalized citizen sponsoring my F1 visa son for GC.  We are at the COS stage and have just received a pink RFIE for evidence of income. I had submitted a 2015 joint (with my husband) tax return with transcript which shows I have more than enough income to cover the 125% poverty line.  Most of my income is from a UK private pension, but I don't know if I will be able to get payslips etc as everything is online and the administrator of the scheme changed at the end of 2016.  Would it be easier to get my husband (US citizen also retired) to co-sponsor?  Most of his income is social security with a small private pension.  His social security alone is enough to cover the amount required, but is social security accepted as income?  Will USCIS still need payslips from my pension? Yikes!
