2016 Taxs Or a Co Sponer? Not denied but not approved.

Me and my Wife, had her interview and everything went well, until they saw my taxs for the past 3 years none of them made the bare minimum 20,025 for me to sponser them even tho I brought pay stubs and a employment letter informing them my salary of around 38,000. So the Officer informed me to either wait for my 2016 taxes  (which show my new salary)or find a co-sponser. I'm having a tough time finding a Sponer so I believe if I show them my 2016 taxes that should be enough. Or should I do both? The officer also said that they had no intention of denying her and took her passport and put it in her packet but they said that the Co-sponer and my Taxes where the only Issues? What can we do? They also said there's no need to go to the embassy instead mail them to the embassy directly. That got my hopes up, this happened in Managua,Nicaragua.

Timeline

The USCIS has a table which lists the required 125% Federal Poverty level for support of your spouse.  Check it out then you will know what you need to do.
