Name change, but not on Green Card

My wife who came to the US on her CR1 never had a last name while overseas; she only had a two-word First name, but not a surname. But the US Embassy and USCIS requires a Last_Name for everything. For her CR1 visa, and subsequent green card, her two-word First name got converted to Surname, and Given name became FNU.

It's so confusing now for us.

My wife wants to take my last name.

Question: Can we go to the county courthouse, change her name legally, but continue to carry her current GC alongwith proof of her name change? Is that legal and could it be an issue travelling overseas?
