Hi!

I was born in Dominican Republic and have always lived here, I have Dominican nationality and Spanish nationality, and have the passport of the European community, because my father is Spanish, in the passport of the European community is where I have all the stamps of entry the USA, which Passport should include to apply for K-1 visa?

I suspect you can use either. Although, you'll want to use the one where you live since that's the embassy you'll have to go to for your interview.
