Bank statement good for how many months

It might depend on the consultate. I used a statement that was approximately three months old at my interview and it was accepted.

However, I suspect that bank statements of 6-7 months old might be too old for most (if not all) consulates. I would get more up-to-date bank statements when the interview date is confirmed.

As an aside, please can you fill in your profile and timeline information so that people can give you most accurate and relevant advice specific to your situation.

Thank you for your help and yes I finally created a timeline. I do have an additional question if I may ask. Her sister has been helping us with all the paperwork and after we were approved for the i129 she had me download package 3 and I have already filled and submitted the DSL 60 online form to the embassy. The concern I have is we do not officially have a case number yet. I worry I should have waited until I received confirmed acceptance from NVC. Do you think this will be a problem?

Which consulate are you going through?

It's advisable to wait for the consulate's instructions as each consulate has slightly different variations on the rest of the process. Doing things out of order can actually cause delays as the consulate won't be expecting a packet 3 from you if they haven't received your case file yet.

Worse case scenario is that you might have to do the DS-160 again. Best case scenario is that they can match up your DS-160 and your case file - but you might have to contact them when you are sure that they have your case file. Each consulate will have a contact page with either telephone number, email or online form.
