AOS since 18 July 2013 - about to leave Illinois to no permanent address - options?

Hi all

We submitted my AOS in July 2013 and have an NOA1 date of 18 July. EAD/AP went smoothly - it was expedited because I had a job offer. But since then we have heard nothing - not even the 'interview waiver' letter. USCIS will not entertain a 'service request' as Chicago field office are processing 1 July 2013 cases as of 31 March 2014.

My problem is that we will be leaving Illinois on 27 May to start travelling the US in our RV for the rest of our lives. We had hoped I would have got my Green Card by then but it now seems unlikely. We will have no permanent address but will have a mailing address in South Dakota after about 3 months. In the interim, I was going to ask a close friend to be my mailing address for USCIS. Is there any issue with having a mailing address where we don't actually live? I saw some posts recently that suggested that people encountered issues with USCIS because they didn't actually live where they had mail sent - I think the examples I saw where people using parent's addresses for mail when they lived somewhere else?

Is this potentially going to be an issue when it comes to ROC time? If we have a mailing address in SD, we can always come back for any ROC interview. We will have no utility bills to show by then but we jointly own our RV and truck and we have wills (with each other as the main beneficiary). And we have joint checking and savings accounts.

Any advice would be most appreciated.
