what happens after NOA2 & NVC - GuangZhou Consulate

I received notice from the NVC (I have the case #) that they have sent my package onto the US consulate in GuangZhou. The problem is that my fiance lives in two places (beijing + a smaller city about 6 hours away). We used her Beijing Address in the initial 1-129F petition, but she is now living at her other address and just keeps her Beijing condo empty for occasional visits. I do not know if she will be able to pick up her package promptly if the GuangZhou embassay mails it to her Beijing address.

My question is two-fold:

1) Should she notify them of a change of address? (I really don't want anything to cause more processing slowdowns) I mean technically she can still receive mail there since she owns the Beijing Apt.

2) If I don't bother reporting an address change....What are the instructions that would be in the packet that they mailed? Can I go ahead and schedule an interview appointment at the ustraveldocs website without having the package in hand?
