Besides Passport Photos, separate signed letter of intent, and separate signed G325 Form from Foreign Fiance, Should I also get additional notarized letters from foreign fiance's family members too. I'm filing through the Ghana Embassy so I know I have to pull out all the stops. Are there any additional signed documents I should get during my final visit to Ghana before filing for K-1?

Other than that I'm basically sticking to the K-1 guide http://www.visajourney.com/content/k1guide

Is there anything things they left out that could be useful for High Fraud counsulates. The embassy reviews are pretty intimidating and I want to make sure everything is perfect before I submit

I think you should go ahead and have the notarized affidavit from your fiance parents here in Ghana. I had my parents signed an affidavit at the high court here in Ghana and sent it to my fiancee which she attached to our K1 petition before filing. Presently she will also have some family members do same and send it to me for my interview. Hope this helps.
