I-134 during employment transition

Hello fellow VJers, I'm hoping some of you have experience or advice for my situation....

We are February I-129f filers (NOA 1: Feb 7)and patiently awaiting our NOA2, but I'm trying to get paperwork in order for the interview and have few I-134 questions. I've been a Peace Corps Volunteer for 3 years and my contract ended this week. I roughly made ~4k USD last year as a volunteer, so we are using a co-sponsor. However, I do have a full time job lined up for August 1st making roughly $20/hr. I'm confused if I should list my former employment on I-134 Item 7 as a Peace Corps Volunteer or my future employment on the I-134 or if I should list "unemployed" and write a letter of explanation. I have my tax transcripts and W2s for my past 3 years with Peace Corp as well as the letter of employment from my future employer stating the salary.

Any advice on what to write on the I-134?

Also, we planned to use a co-sponsor for the I-134, but since I will be working (and earning above 125% of poverty level)for a while by the time we get to the AOS stage will it be necessary to have a I-864 co-sponsor? Or is that more based on your current situation at the time of filing? I ask because I'd really like to not have a co-sponsor by the AOS stage, but if my financial situation renders it, perhaps I should be prepping my I-134 co-sponsor now.
