When I start the process for k1 visa, Does my fiancee have to sign the I-129 also. I know I have to sign it and send documents, but I was inform that it's not necessary for my fiancee to sign it. Is this correct?

Correct. You'll need to sign the I-129F form, but your fiancee will need to sign the letter of intent and the G-325A. I just saw a different thread with some people going back and forth about the fiancee needing to sign the G-325A or not and it being OK to wait for the interview, but I would think that she needs to sign this as well. It would be her biographic information that she needs to confirm. Just make sure that you sign the cover letter, I-129F, your G-325A and your letter of intent.

Good luck compiling everything and take a look at the example forms here on the site, they helped me a lot :)
