Question about interview and dates

I have a question in regards to the visa process. Currently my fiance and I are waiting for our interview date in Juarez, its set for Oct 4th I believe. My I-797 notice is good until 10/24/11.

Theoretically speaking if an interview date is missed can another one be scheduled as long as it's before the expiration of the I-797. Also, if no interview takes place before the 10/24/11 date in my case is there anyway to extend it or is there absolutely no way around it and you have to file from the beginning again? Again, Im just curious but Id like to know if anyone knows for sure.
