Just bashing through my I-751 at the moment...

1) For listing information about my children, I assume they mean any of my biological children, not my USC's from previous marriage (even though I still consider them "mine" :-) ?

2) We moved house just three days before the "resident since..." date on my resident card - is it worth me listing the old address on a separate sheet as a previous address, even though we'd moved from there by the time I became (in their eyes) a permanent resident?

cheers

Welcome to VJ!

Did you file an address change form before you received your 2 year GC? Then I would say you can omit the residence part since you have been living there since, as you said, in their eyes, became a LPR.

As for the children, not too sure since I've read previously different answers and different suggestions....

Someone will answer that...
