I was wondering, should I rather send copies than originals with my I-485 package? (for my wife K-1 and daughter k-2). The thing is I'm doing the I-485 forms for my wife and her 5-year old daughter. Also, is there any part of the forms where I can assure immigration that her daughter is included for the adjustment of status?

send copies, bring originals to the interview, and while your making copies, make replica of your entire AOS packet.

Thanks for letting me know on that part. By the way, is there any part of the forms where I can assure immigration that her daughter is included for the adjustment of status?
