i am a british citizen but have no house of my own as i travel almost permanently though work so i use my parents address in france as my home/mailing address. when my american fiancee fills out the I-129F form therefore i will be a uk citizen but with a french mailing address - does anyone know if this is likely to cause us problems or if my mailing address is immaterial as long as it's clear i'm british and want my interview at the british consulate?

So your basically asking if the USCIS can make a mistake or be confused? Yes, they can.

Your fiancee needs to make clear that you live in Britian, either by giving an address, other than a mailing address, in Britian or an attached explanation. Worst case you petition gets sent to Paris where you can make a request for consulate change OR just go to Paris for the interview. Persons interview in their country of permanent residence, not citizenship.

Include a letter with your application stating exactly what you have just told us. I would suggest also getting a letter from your current employer to back this up. If you provide as much information and proof as possible and ask for your interview to be in London, it shouldn't be a problem. Good luck!

I agree but I would include this as a rider to the question re: your address. And, if I was going to include a letter from my employer, I would include a declaration explaining the same.
