I am about to send in my papers for AOS. Everything is done except I don't have a letter from my employer saying my income will continue from my job.

My boss is in the hospital and I don't know when he will get out so that is why it hasn't been done.

My husband who is the sponsor has made more than 125% of the poverty line for the last 2 years(he started that job mid of 2005 so he made less in 2005). I was wondering if I really need the letter from my employer or if my paper work is okay as it is right now.

I really don't want to wait any longer to send it off.

Do you think that they will reject it if I don't include a letter saying my income will continue even though my husband is making more than the cutoff?

It's up to you, but at least you need to add the paychecks for the last 6 months to demonstrate he's earning 125% above the poverty line.
