Electronic Processing Confirmation

I submitted all of my AOS and IV documents via email 3 weeks ago, but I have not received any confirmation that they received them. Do they usually send out emails to confirm they have received them? I called the NVC and the operator said my 60 days will start the day I sent the email, but I asked if they received it. He said they could not see that information, but to trust that it went through. Of course this is easier said than done. Is there a way I can know if they received the email, or do I really have to "trust" that it went through? I'd hate to be waiting all this time and find out they never received my documents.
