Trust all those utilities are joint. Yes, you must explain why you didn't have to file tax returns and why you don't have joint tax returns.
Marriage, birth and social security stuff are not relevant with I-751.
If your husband is the US Citizen, then no need of his previous names to be mentioned. The previous names of the immigrant spouse are required to be mentioned.
