little worried that we won't be able to file our AOS before my visa expires...if ever, is it okay to file a week after my visa expires??..we are still completing everything..may God help us all!!

the visa is really just entry into the states and AOS is a 90 day expry. the 90 days begin once you get into the US and those days are used to get married and to get your adjustment of status completed.
basically, a new expiration begins and this is specified on the i-94 entrance/departure paper that you received at the border (this form should have been given to you on the aircraft and filled out by you). thats the expiration date on the i-94 and the k1 (k1/k2 but i...

but in your case k1) must marry by that date for you to adjust status from k1 to resident (and the expiration of the i-94 will be 90 days from the date of POE).
