Regarding SSN, my wife's SSN was never processed by immigration (Covid Delay?)
So, we made the card ourselves (made an appointment with SSA and submitting all the documents/paperwork/SS5 to them physically). The SSA office mailed the SS5/copies of documents to Baltimore.
I think it took like an additional 2 months to get the cards physically, but I kept bothering SSA every week about it.
(However, this was from the end of last year to beginning of this year).
If you are not in any rush, I guess you can wait to see if USCIS submits and starts the process for you with SSA, however, we needed the number asap.

For our situation, we just assumed USCIS submitted the information to SSA and waited I think for 2 months after her arrival here. However, I never received anything. (Also, this was during the peak of Covid).
You should call your local SSA and see if they have any file on you(or spouse) in their system. However, since you arrived 3 weeks ago, they probably do not. So, you can call your local SSA and see if they can do it for you instead, rather than waiting for USCIS to submit everything for you. (Also, there might be a timeframe which you can actually start the process with SSA)
Luckily for myself, I was able to receive the card a day prior to my deadline.......
(Also, I think you can still work without a SSN)
