My income requirements if not enough to sponsor my fiancé. Can I include my real estate value ? I am short by 14,000 and my real estate value is 18,000.

My fiancé is from Mongolia and I am planning to use a joint-sponsor since my income is not enough. I was wondering if anyone knows what countries banned joint-sponsors for the K1 visa. 

I am preparing for my fiances K1 visa interview. My income is not enough to meet the US income requirements. My dad is kind enough to be my joint sponsor and I was wondering what name I put on the affidavit of support form if my parents filed their taxes jointly. Also do I fill out the affidavit of support form as well even if my income is not enough? 

My fiancé will arrive in the USA next month with a k1 visa and we have 90 days to get married. I was wondering if we can just get married at the courthouse in my town with a few witnesses? I really want to wait a year to have a big reception with all my family and friends. I know they will ask about our wedding at the adjustment of status interview so I was wondering will a small courthouse wedding be okay with the USCIS officer or will they think we are faking this relationship ?
