They really pick up the flavor of the seasonings, which depends on who is cooking them. The natural taste is very smooth. There really isn't much of a fishy taste at all. I think it's much better than lobster, because the meat is much more tender.

Thanks. It seems like I was waiting forever. Lindsay is faxing in packet 3 this morning. Hopefully she will be here for the first crawfish boil of the season.
