Have any girls run into this here--where the 3rd shot of your MMR will preclude you from getting pregnant?
Is it mandatory, is there a way with not having to deal with the Rubella shot?

Yes, rubella-titre (which checks if any exposure to rubella virus--including vaccination--has occured).
