I also petitioned for my spouse and kids with a lot of documents requested by USCIS prior to approval. However, when I was completing the NVC part. I did not include most anything outside what NVC requested . This is because, USCIS have all such documentation and to the best of my knowledge anything relevant that they requested as part of the petition copies would also be forwarded to NVC and if possible to the embassy. That's my personal thoughts.
