What's the difference between processing date and priority date? If I filed i-130, should I look for the processing date when is my petition approved then check on the priority date? Thanks!

It's i-130, Petition for Alien Relative (Permanent Resident filing for a spouse,and child under 21). Do I need to see the processing date first, then later the priority date when visa is available?
